There are three variables which determine the price of a cake:

  1. The number of people it will serve (its size)
  2. The flavor of the cake and its filling
  3. The complexity of the design

The smallest cake that we can draw on is an 8-inch round, serving 10-12 people.

Cutting out a cake to a special shape adds at least an additional $20 to its price because of the extra labor involved.

Experience has taught us that some fillings and frostings work better than others, preventing problems with slippage on certain cake styles.

Choosing certain styles can limit your selection of either cake, filling or frosting flavors.

Since I learned to cake decorate in 1968 I have made Bluebirds out of Royal Icing, painted their eyes and beaks with food coloring – my favorite movie is “Wizard of Oz” and my favorite song Is “Somewhere Over The Rainbow bluebirds fly” prompted me to put a Bluebird of Happiness on every cake.

To honor the birthday person, people started saying “isn’t that your trademark?” I guess it is.

I usually make 300-500 bluebirds at a time to this day. I still personally make my bluebirds and love to put them on my cakes to bring happiness for all occasions.

Some of my customers and family want bluebirds for all the kids so they don’t fight over the bluebird. I’m happy to oblige.
